So, tomorrow I plan on having some celery and baby carrots for lunch, however, I do need something else with it. Any other ideas?

I don't like to answer a question with a question, but I have to in your case. Why are you just eating celery and carrots for lunch? My recommendation would be to keep those items around for mid-afternoon or evening snacks, especially the carrots because they fall into the "sweet" vegetable category, and eating "sweet" vegetables lessens our cravings for less healthy sweet alternatives.
My suggestion is that your lunch consist a source of protein either from meat such as chicken, fish, or turkey [not luncheon meat,] legumes such as beans or lentils, or whole grains such as millet, brown rice, or quinoa together with a green leafy vegetable for a long slow energy release.
