  2. Sadly, one source predicts that up to 10,000 independent restaurants could close due to the struggling economy. The food and beverage industry has been hit hard with failing economy and independent restaurants aren’t being approved for as many loans as before. May 2012 be a year of expansion and good business for your restaurant.
  3. Menu trends for 2012: Several sources have commented on possible menu trends next year. Generally these include more beer gardens, smaller portions, mini bites and healthier foods with an emphasis on local products.
  4. More specifically, you should see the following food items incorporated into 2012 menus according to a National Restaurant Association survey:

For instance Outback Steakhouse has the “Bloomin’ Onion” and McDonald’s has the “Big Mac.” Small, independently owned restaurants will be emphasizing their signature menu items this year.
  7. The Food Truck or mobile food industry fad should continue to grow in 2012. Popular in cities like Los Angeles, Chicago, New York and recently, Miami, food trucks will continue to produce gourmet and specialty foods on wheels in 2012. This trend will not be phasing out this year.

Isle Casino- For those in Pompano Park who will be really hungry during the holidays, check out the Christmas buffets (more like feasts) at the Isle Casino. Farradday’s is hosting an Asian Holiday Buffet (I’d be curious just to find out what exactly is included at an “Asian Buffet”.) from 4:00 pm-9:00 pm at $22.95 for adults and $10.95 for children under age 12.  Also, the Isle Buffet will also be providing a Christmas Buffet beginning 11:00am and ending 9:00 pm.  end_of_the_skype_highlighting

ZED451 in Boca Raton’s Mizner Park will be offering holiday specialties on both Christmas Eve and Christmas Day. At $44 a person, try citrus-crusted salmon, buttermilk ranch marinated bottom sirloin as well as seasonal soups and other gourmet menu items.

Traditional Holiday Ham- Paula Deen and the Food Network have published a wonderfully traditional holiday ham recipe. Including maraschino cherries, pineapple rings and a brown sugar glaze, this ham will add a delectable holiday flavor to your home’s Christmas menu.

 

Curry Turkey- For a less traditional, more spicy dish, try this recipe for turkey flavored with Thai-style red curry.. Also, this recipe is perfect for leftover holiday turkey as it calls for pieces of turkey and not the whole bird.

6 days till Christmas: Make Sure Your Restaurant

According to one article by the Nation’s Restaurant News, although they aren’t happy about it, many restaurant owners will be keeping their restaurants open Christmas Eve and Christmas Day. Why? Because this year, Christmas falls on a weekend and weekends, especially holiday weekends, usually mean large profits. And continually, New Year’s Eve is also on a Saturday so many restaurateurs are actually losing two weekends. Owners and managers that choose to close down and spend time with their families will be taking a huge financial hit.
            Still Christmas is generally a day of peace and spending time at home. Customers don’t usually eat out on Chris
tmas Day. According to the research company NPD Group, just 2 percent of the nation's population planned to dine outside of their home on Christmas day last year (2010). This year, the National Restaurant Association conducted a survey that predicted that 8 percent of American consumers will dine out this year. That’s a six percent increase.

It will be interesting to follow the actual numbers and see just how accurate this year’s prediction is. But if the NRA’s report is correct, it may be worth it for some restaurants to stay open.

Here’s some advice for those restaurants that will be open: Make sure your restaurant is clean for the holidays. Candy Cane Jello Shots

Ingredients:


Red Layer:



2pkgs

(3 Oz. Each) Cherry Jello



1⅓ cups

Boiling Water



⅔ cup

Hot Damn Liquor




White Layer:



1 can

Sweetened Condensed Milk



1 cup

Boiling Water, divided



2pkgs

Knox Gelatin



½ cup

Cold Water

¾ cup

Peppermint Schnapps


Red Layer Instructions: Mix the jello with the 1 1/3 cups boiling water. Stir until the jello mix is dissolved. Cool the solution and stir in 2/3 cups of liquor.

White Layer Instructions: Mix the sweetened condensed milk with 1/2 cup boiling water. Sprinkle the packages of Knox gelatin over 1/2 cup cold water. Let it stand; add remaining 1/2 cup boiling water to dissolve gelatin. Add gelatin mixture to milk mixture and stir to combine. Cool to room temperature. Stir in the peppermint schnapps.

Layering the Jello Shot: Alternate the white and red layers and refrigerate each layer until they are set.  For added detail, put whipped cream, crushed candy canes and red sprinkles on the top of each jello shot.

Preparing a Kitchen for Chanukah

Last week, President Barack Obama and his family hosted the annual White House Chanukah reception. To prepare, the White House Staff is working hard to kosher the White House kitchen- that is to prepare the kitchen to meet kosher standards. Chanukah actually begins on December 21, but the President decided to have the celebration a little early this year.

We at Emmaculate Reflections restaurant cleaning services, kitchen cleaning services, country club cleaning services and hotel cleaning services were intrigued by this process and thought to share it. So, here are step by step instructions on how to prepare your kitchen, whether home or industrial, to be kosher:

  1. If you have never done this before, consult a Rabbi. The requirements for kosher are extremely stringent and methodical. It is easy to prepare incorrectly.

  2. Start the oven’s self-cleaning cycle. Or if the oven does not have a self-cleaning cycle, consult a Rabbi. The Rabbi may tell you to heat the oven to a certain degree for a specific time.

  3. Clean the microwave. Then boil a glass of water in the microwave until the all the water has evaporated into steam.

  4. Scrub all stainless steel surfaces with disinfectant.

  5. Wrap counters in tinfoil, then with plastic wrap. Seal the wrapping with masking tape. This process applies to any surface that will come into contact with food

  6. Anything else, dining utensils, cooking utensils, serving plates and dishes should be cleaned and then set aside for 24 hours. A rabbi must then rinse these pieces in boiling water.

  7. Unless you want to spend a lot of time koshering your refrigerator, tape it shut. This way, the non-kosher aromas and bacteria cannot contaminate your newly created kosher space.

There are also sets of rules for kosher dining, meals. For instance, there should be two separate sets of dishes: one for meat products, and one for dairy products. Check with a Rabbi for more of these specific guidelines.

Ways for Restaurants to Give Back this Holiday Season

It may be cliché, but the holiday season isn’t just about receiving; it’s also about giving. Here are some programs that give back to the community that your restaurant can host or participate in:
  1. Offer a holiday special that gives a portion of its proceeds to a particular charity. For instance: “Try our new sandwich and soup combo for 8.99. One dollar goes to _name a charity here___.”  Customers might be extra willing to give because of the holidays.
  2. Host a donation program from a charity organization. Here are some ideas:
    1. Toys for Tots: Sign up to have a Toys for Tots drop-box at your restaurant. You can place the drop-box in your lobby. The U. S. Marine Corps Reserve collects the new toys that are donated and then distributes the toys to needy children in the community.
    2. Salvation Army Angel Giving Tree:  This program allows donors to “adopt” an “angel” or child and help meet that child’s Christmas needs. This year, the Salvation Army Angel Giving Tree program has gone online with the help of JCPenney. However, you can still promote the program in your restaurant lobby. Go all out by setting up a Christmas tree with angel ornaments explaining the program, or just offer promotional pamphlets. Either way, the Salvation Army Angel Giving Tree is an excellent way to bring holiday happiness to children in the community.
    3. Support Our Troops Operation Shoebox: Feeling patriotic this holiday season? Children aren’t the only ones in need of support this time of year. Our men and women in the armed forces, especially those deployed overseas could use some cheering up. Your restaurant could collect shoeboxes for Support Our Troops. The shoeboxes include snack foods, hygiene products as well as a handwritten letter from a volunteer.
  3. Pay your staff to work at a local homeless shelter or soup kitchen for a day, or even just a few hours. Most customers will value your efforts to support the local community and may even give you some “good press” with friends and family members.

Avoid Bacterial Contamination: Keep Your Restaurant Sanitized


Bacteria: Microorganisms made up of a single cell that has no distinct nucleus

A professional restaurant should be clean even on the microscopic level. In other words, it will not matter how clean and tidy your restaurant may appear on the surface, if you have not taken proper sanitation precautions, you and your customers may be endangered.

These are the top three harmful bacteria causing food-borne illness:
  1. E coli- (Escherichia coli) Human exposure to some strains of e coli can lead to severe infection and even life threatening levels of food poisoning. According to Medical News Today, children, elderly patients and patients with a weak immune system can develop kidney failure. People are most often exposed to e coli by drinking contaminated water and consuming contaminated food such as ground beef, fresh vegetables and unpasteurized milk. Infected individuals are most likely to spread e coli by neglecting to wash their hands after using the restroom.
  2. Salmonella- According to the USDA Food Safety Inspection Service, these bacteria is the most frequently found food borne illness and is commonly found in under cooked meat, particularly poultry meats. The bacteria live in the intestinal tracts of infected animals and humans. Salmonella is highly infectious. 1.4 million cases of foodborne illness and more than 400 deaths annually in the United States are caused by this bacteria. Although salmonella is infamous for its contamination of raw poultry, it is found in any raw food from an animal organ including seafood, dairy and eggs. The best way to avoid salmonella contamination is to cook your food at the standard internal temperatures required by the FSIS.
  3. Shigella- Shigella is a highly contagious germ that causes diarrhea. Infectious strains of shigella are mostly contracted from unsanitary restroom facilities. To avoid the spread of shigella in your restaurant, require your employees to wash their hands after any restroom use and also, regularly sanitize your restroom facilities with a bleach disinfectant.

    You can avoid the spread of bacteria in your restaurant by:

    1.
    Mandate that all employees wash their hands after using the restroom and before preparing any new food item.

2. Refrigerate all food items properly. Don’t let any perishable item sit at room temperature for more than two hours. If it’s meant to be kept cold, keep it cold.

3. Separate raw meats from other refrigerated items to avoid cross-contamination. Also, make sure any raw items are properly contained to avoid leakage of juices.

4. Wash all unpackaged fruits and vegetables before use. Not only will this help to remove pesticides, but it will remove some bacteria as well.
