Chris, I wanted to give you a heads up. The Syracuse Real Food Co-op sells Hillcrest Milk, Cream, and Butter. If you're lucky, you'll find their whole milk, it seems to be the top buy in the dairy section and tragically I often make the 25minutes trek into SYR to find it conspicuously absent. Hillcrest milk is the closest thing I've found to the raw milk I used to drink from a local grass-fed dairy where I lived in Southeastern PA. That's saying a lot.
The cream is superb, thick and very flavorful. I made the custard for a chocolate raspberry ice cream and I was astounded at just how thick the cream was, and very smooth and rich tasting. This is not one of those watery creams thickened with bean gums...it's the real deal.
And last but certainly not least, the 1lb tub of butter is truly delicious, lightly salted, rich yellow, and very buttery. The results of a recent pie crust transcended by leaps and bounds the pie crusts that I've made in the past. It tasted like a croissant and smelled like heaven.
All the products are of noticeably superior quallity to the dairy we're used to seeing in the supermarket. It is certainly better than 90% of what's called organic dairy. I only wish that there was some way one could obtain an unhomogenized product. By Ben Heitman on March 07, 2008 at 07:15 AM
Why has Wegmans stop selling Hillcrest milk? I miss my Moravia Milk. It's about perfect for creaminess, it has flavor, earthy, does not taste like water (I only drink whole milk). Where can I find more?
Mind you I've worked in classic culinary arts; I know what good is. Flavor and texture is there.
