How do low profile tires impact the accuracy of a speedometer?
It's not the low profile that affects the speedometer, it's the diameter of the tire. The speedometer system is calibrated to convert the revolutions of the tire into miles per hour and mileage traveled. If you put a tire on your car that is a smaller diameter than the original tire, your speedometer will read faster than your actual speed because the tire will not roll as far per revolution. Most vehicles can have the speedometer system recalibrated to correct for this but it is not something that a do it yourselfer can do.
