A host or hostess will greet and seat customers. He or she is also responsible for following the order of rotation for servers, so that the numbers of tables per server are roughly even.
If there is a waiting list for tables, they will need to make that list and then call the customers when their table becomes available.
Additional responsibilities include putting together or taking apart tables for larger parties, effectively communicating with waitstaff and managers about perceived problems, stocking children's menus, and on occasion, helping waitstaff with drink orders, especially if it is necessary to double or triple seat a server.
