How to Cook Fresh Cut French Fries in the Restaurant
Many restaurants serve prepackaged or even precooked French fries. Most of these are good; however, fresh cut French fries are always better. With some fresh potatoes, a temperature gage and some hot oil, you will have French fries ready to serve in any restaurant.
Choose fresh potatoes. Yellow potatoes are best for French fries.
Wash the potatoes thoroughly.
Boil the potatoes for about 3 minutes. This will ease the peeling process.
Peel the skin off the potatoes.
Cut the potatoes into the classic French fry shape.
Allow the cut potatoes to dry out. This will take about 30 minutes.
Fry the potatoes at a low temperature, approximately 160 degrees Celsius, until the outer layer of the potato begins to form blisters. This should take about five minutes. Do not allow the potato to brown.
Remove excess oil from the French fries.
Allow the fries to cool. You can put them in the refrigerator or cooler for about 20 minutes.
Heat the oil to 190 degrees Celsius and place the cooled fries into the hot oil.
The fries will immediately start to change to a yellow-gold color.
When they begin to float or have a golden brown color, remove the fries from the oil.
Remove any excess oil.
Season with salt, pepper or your favorite seasonings.
Enjoy crunchy, fresh French fries that can be served in a restaurant.
