How to Make Vegan Burgers
Many people today are very conscious of what they eat. Vegetarians have gained quite a following and there are many food lines coming out that are geared specifically to them. You can even find “veggie menus” in many restaurants today. Here is a way to have some Vegan burgers at home that you can make yourself.
Ingredients for vegan burgers:
- 1 carrot, grated and peeled
- 6 mushrooms, chopped finely
- 1 small potato, grated and peeled
- 1 egg white
- 1 clove garlic, finely chopped
- 2 scallions, chopped finely
- 1 cup of plain yogurt
- 2 tablespoons of chopped fresh mint
- 3 tablespoons of olive oil
- 1/2 red bell pepper, finely chopped
- 1 teaspoon of cumin
- Dash of cayenne pepper
- 3/4 cup of fresh corn kernels or frozen, thawed
- 1/2 cup of chopped fresh spinach
- Salt and pepper
- 1/2 cup of fresh bread crumbs
- Heat 1 tablespoon of oil on medium high heat.
- Stir in the mushrooms, scallions, bell pepper and corn.
- Allow cooking for 3-4 minutes.
- Add in the cumin, cayenne and garlic and cook for approximately 30 seconds.
- Take away from the heat and stir in your spinach.
- Put the potato and carrot into the mix and mix them together well.
- Place in the egg white and season with salt and pepper to you own taste requirements.
- Mix in enough breadcrumbs to keep the mixture held together. Once you have the correct consistency make about six patties and put them on a plate. Chill for about an hour.
- When you are ready to eat place about 2 tablespoons of olive oil in a non-stick pan and cook until they have a golden look on each side or until they reach the hardness you enjoy.
- Serve with your favorite beverage and sides.
