How to Roast Apricot Kernels
Apricot kernels are similar to the size and flavor of almonds. In some countries they are used as an inexpensive substitute for almond paste. The kernels contain a high amount of naturally occurring cyanide compound, which must be broken down by roasting before the apricot kernels can be safely consumed.
How to Roast Apricot Kernels
- Use a paring knife to cut the apricots around their pits horizontally.
- Twist the apricots in half to separate them.
- Remove the kernels from the center of the apricot and reserve the apricot for another use.
- Turn on the oven and preheat it to 350 degrees Fahrenheit.
- Place the apricot pits on a baking sheet and spread them out evenly.
- Bake the pits for approximately 10 minutes.
- Remove the pits from the oven and allow them to get cool enough to handle.
- Use a nutcracker to crack the pits open.
- Remove the kernels from the pits and place them on the baking sheet.
- Put the kernels back in the oven for approximately 5 minutes.
- Remove them from the oven and allow them to cool.
