How to Cook Barbecue Ribs in a Pressure Canner
A pressure canner can be a cook’s best friend. It cuts cooking time, and barbecued ribs are no exception. They cook up in a flash as compared to the oven or crock pot, and they are moist, tender and delicious.
You need
- Pressure canner
- 1 or 2 tablespoon oil
- Pork ribs
- Water or other liquid
- Choice of barbecue sauce
- Add oil to the pressure canner. Use more oil in a large pressure canner. Heat the oil in order to brown the ribs. Browning the ribs adds a rich caramelized flavor.
- Cut the ribs into serving size pieces. Brown the ribs in batches if they won’t fit in a single layer in the cooker.
- Place the rack in the bottom of the pressure canner. Add the ribs on top. Pressure canners require liquid, and how much is added will depend on the size of the cooker. Most pressure canners require that the liquid reach the bottom of the rack. Barbecue sauce can be the liquid, but it must be thinned out with water so as not to stick like glue to the inside of the canner. Use water if planning to finish the ribs on the grill.
- Place the lid on the pressure canner and seal according to instructions. Bring up the pressure and let the ribs cook for 30 minutes at 10 pounds of pressure or 15 minutes if 15 pounds.
- Remove the pressure canner from the heat and let the cooker lose pressure naturally or by running cold water over the top. Open the cooker and remove the ribs. Check for tenderness. If the ribs are not tender enough, put back in the pressure canner for another 5 minutes. Take to the grill if planning to finish over a flame.
