How to Freeze Fish Cakes With Mayonnaise

Because mayonnaise cannot be frozen, many people think that fish cakes made with mayonnaise cannot be frozen. This is not true, even though mayonnaise does tend to separate when frozen, once it has been combines and cooked with other ingredients, it can be frozen the same as other foods.

  1. Fry the fish cakes as you normally would. Place the cakes on a cooling rack and allow several minutes for them to cool.

  2. Place a layer of freezer paper or heavy-duty foil onto a counter or table. When the fish cakes have cooled completely, move them onto the paper or foil. The fish cakes should be at least one to two inches apart.

  3. Wrap the fish cakes in the paper or foil and place them in a sealed freezer bag. If you have prepared a large amount of fish cakes, you may want to freeze them in small batches. If you have a family of four, seperate the fish cakes into enough servings to feed four people at a time. This will prevent you from thalling out all of the fish cakes at one time.

  4. Place the wrapped fish cakes in the freezer. If the freezer has shelves, stack the fish caked on top of each other so that they remain flat at all times. If the fish cakes are moved around or smashed before they have frozen they may become damaged or fall apart. Once the fish cakes have frozen, they can be more around in the freezer without being damaged.
