Types of Bagel Shop Equipment

If you are opening a brand new bagel shop you definitely need to know the equipment used. Perhaps you are just curious about the different equipment used in a bagel shop to make that delicious bagel you enjoy. The equipment used will vary from one bagel shop to another, but basic equipment can be found in all.


The Mixing Process


As with any kind of dough or bread product, a bagel shop must have a very effective mixer. Most bagel shops have more than one mixer depending on the volume the store does. A spiral mixer is for a small batch while the horizontal mixers are for those shops that sell lots of bagels. After the dough is mixed properly, it is left to sit for its proper consistency, which is called “floor time."


Makeup – Rotary Knife


The makeup machine is what the dough is fed into and it has a rotary knife divider, which forms the dough, and cuts it into the bagel shape. Obviously this is a very important machine that you will find in all bagel shops or bakeries that make bagels as it is needed to get the right shape and cut of each bagel. A proof box is where the bagels go after going through makeup.


Baking – Steam or Boiling and Finishing


Different bagel shops use either a steam baking machine or they boil the bagels at this point. Most bagel shops will have various reasons why they use one method over the other. Racks are necessary equipment because after baking / boiling, the bagels have top dry completely. Once dried a machine called a rotary hearth oven finished the process of the making of a bagel.
