How is Ice Cream Made?

Ice cream is a favorite frozen treat for children and adults. There are so many different flavors on the market today, from simple vanilla, to the extreme candy bar, cookie dough, and peanut butter. Everyone has a favorite flavor, but no matter what flavor you enjoy, ice cream is basically made the same.

  1. A combination of dairy products, including condensed milk, cream and butterfat are mixed with other ingredients such as sugar, flavoring and additives.

  2. Eggs or egg products may be added to the mix to make the ice cream custard.

  3. Federal regulations require each container of ice cream to have at least 10 percent butterfat.

  4. The additives help the ice cream from melting during shipment or forming ice crystals.

  5. This combination of ingredients are mixed for 6 to 8 minutes and then heated to 180 degrees to kill any bacteria.

  6. The heated mixture is slowly cooled and allowed to rest for 6 to 8 hours at 36 degrees.

  7. Flavorings, such as cookie dough, candy pieces, fruits and nuts are added to the cooled mixture.

  8. The mixture is frozen to negative 40 degrees and then pumped into individual containers.
