Ice Cream Sandwich Recipe
Ice cream sandwiches are a treat enjoyed by both children and adults. While it is easy to buy them from the store, it is also easy to make your own ice cream sandwiches. Kids will enjoy helping to create them almost as much as they will enjoy eating them when they are finished.
Recipe
Begin making the cookies by mixing together 1/2 cup of margarine with 1 cup of brown sugar. Beat in two eggs, followed by 1 teaspoon of vanilla extract. Mix together 1/2 cup of cocoa powder, 2 cups of flour, 1 teaspoon of baking powder and a pinch of salt. Add the flour mixture to the margarine mixture and stir until they are well combined. Use your hands to form the dough into a ball and place it in the refrigerator for an hour. When the cookie dough is chilled, use a floured rolling pin to roll it out on a lightly floured surface. Cut out rectangle shapes in the desired size using a sharp knife, and place them on an ungreased baking sheet. You can use the tines of a fork to make patterns on the cookies. Bake the cookies in the oven at 375 degrees F for 8 to 10 minutes. Once the cookies have cooled, place slabs of ice cream in desired flavors between two cookies. Ideas for flavors include vanilla, chocolate and mint chocolate chip. Wrap the ice cream sandwiches in tin foil and place them in the freezer until they are ready to be eaten.
Ideas
Try using a variety of refrigerated cookie doughs to make ice cream sandwiches. Chocolate chip cookies, sugar cookies and white chocolate macadamia nut would all be great to use for ice cream sandwiches. Simply place a scoop of ice cream on cookies once they are cooled, and freeze them. You can also roll them in sprinkles, chopped nuts or chocolate chips for a special touch.
